Sourced from Gimblett Road fruit. This wine is a mixture of Chave clone and mass select clone. The grapes were crushed and then warm fermented (to extract as much flavour, colour and tannin from the skins as possible). The young wine was then settled for a few days and racked off the yeast lees. Malolactic bacteria were added to aid a quick and full malolactic fermentation. The wine was then put to barrel for 1 year.
After 1 year of aging in oak we fined the wine with a little egg white, filtered and and bottled it.
