| Winemakers Notes |
The grapes were crushed and destemmed and warm fermented with a Merlot specific yeast strain. The warm fermentation and 4x daily pumpovers allowed for maximum extraction of flavour and tannin from the skins into the wine. The young wine was then settled for a few days and racked off the yeast lees. Malolactic bacteria were added to aid a quick and full malolactic fermentation. The wine was then put to barrel for a year to mature and clarify.
After 1 year in barrel we fined the wine with a little egg white, filtered and bottled it in July 2008
