The winner of Bronze medals at the 2008 Royal Easter Show and the 2008 Hawkes Bay Wine Awards, this wine was cool fermented in stainless steel with extended time on yeast lees to create a rich, weighty wine. It has stonefruit characters on the palate and a crisp dry finish. |

The grapes are of the premium Clone 15.After a long dry summer we harvested our Chardonnay grapes at optimal ripeness (24Brix), on 22 March. The grapes were hand harvested and whole bunch pressed. The juice was cold settled to remove solids then racked to give us nice clean juice for fermentation. Fermentation took place in stainless steel under cool temperatures. After fermentation the wine was left in contact with the yeast lees for approximately 2 months. The aim of this was to add richness to the wine |

Made from fruit grown on our home block on Ngatarawa Road, Bridge Pa. This vineyard is six years old and is planted in 100% clone 15 Chardonnay. We handpicked the best portion of the vineyard for our Salvare wines. |
